this knife was intended to be used for cleaning/cutting the chicken but we ended up using it also for expiring the chickens. Great knife; I recommend either buying a sharpener or having at least 3 of them (I processed 15 birds today and i noticed it going dull around bird 7. No major complaints - just be prepared..
